The Cuisinart 18” Vertical Charcoal Smoker is the backyard workhorse for slow-smoked brisket, ribs, salmon, and jerky. With two chrome-plated steel grates and 510 square inches of cooking space, it tackles big cooks and still fits a tailgate. The vertical design circulates heat and smoke efficiently, while the water bowl keeps meat juicy and the dual vents let you dial in your temperature.
This smoker combines classic charcoal flavor with practical features. The built-in thermometer, hinged latching door, and water bowl make temperature control straightforward, even for beginners. The removable main body also converts into a compact charcoal grill, giving you two tools in one.
The smoker is ready to use in about 15 minutes. The main body lifts off to act as a grill, the charcoal grate goes in the base, and the latching door secures everything. Season the smoker before first use: coat the grates lightly with oil, smoke at a low heat for 30–45 minutes, then brush off residue.
Dual top and bottom air vents control airflow. Open vents to raise the temperature, close them to lower it. The porcelain-enameled water bowl adds moisture and acts as a heat sink, smoothing out fluctuations and making it easier to keep temperatures steady for long cooks.
For brisket, apply a dry rub, smoke at 225–250°F until the internal temperature reaches 203°F, then rest before slicing. For ribs, use a 3-2-1 method: 3 hours smoked, 2 hours wrapped, 1 hour finished with sauce. Chicken thighs work well at a slightly higher temperature and cook faster.
If the smoker isn’t getting hot, make sure charcoal is lit and the vents are open. Too much smoke? Use fewer or pre-soaked wood chips, and keep the lid closed. Always empty ash before a long cook to improve airflow.
510 sq in across two chrome-plated steel grates gives room for brisket, ribs, and chicken.
Porcelain-enameled water bowl locks in moisture and deepens smoky flavor.
Dual top and bottom vents make heat management straightforward.
Hinged latching door lets you add charcoal or water without losing heat.

Low and slow is the name of the game. Keep your charcoal bed steady, add wood chips in small amounts, and resist lifting the lid. The water bowl helps maintain moisture, and the dual vents give you control over airflow and temperature.
Season a packer brisket with equal parts salt and coarse black pepper. Smoke at 225–250°F with oak or hickory wood chips until the internal temperature hits 203°F in the point. Wrap in butcher paper after the stall, around 165°F, then rest the brisket in a cooler for at least an hour before slicing.
The smoker’s 18-inch footprint fits in most vehicles, and the removable body converts to a grill for burgers and hot dogs. Use the smoker for pre-game beef short ribs, then switch to grilling once the party starts.
Seasoning creates a protective layer and removes any manufacturing residues. Wash the grates, coat lightly with vegetable oil, and burn a small coal bed for 30–45 minutes with the vents open. Let it cool, brush clean, and it’s ready for real cooking.

The smoker assembles in about 15 minutes with a Phillips screwdriver. The main body, cooking grates, water bowl, and charcoal grate fit together, and the hinged door latches shut.
Use the dual top and bottom vents. More airflow raises the temperature, less airflow lowers it. The water bowl helps stabilize temperature swings.
Yes. Remove the smoker body and use the base as a compact charcoal grill perfect for steaks and burgers.
The 510 sq in cooking area fits a full packer brisket, two pork butts, or several racks of ribs.
Use fewer or pre-soaked wood chips and make sure the top and bottom vents are open for clean airflow. Excess ash can also restrict airflow, so keep the ash tray clean.
Perfect for ribs.
Great smoker for backyard parties. Held temperature all day.
I've been smoking meat for 30 years, and this is a decent unit. The water bowl keeps things moist. The thermometer is nice, though not super accurate. The build is okay for the price. I'd say it's a good starter smoker.
Works like a charm.
Bought for my son. He uses it every weekend for brisket.
