Assemble the base, place the bowl over it, attach the ring that holds the fork ring, and plug in the temperature probe. For chocolate, start at a low setting and stir until smooth. For cheese, medium-low keeps the blend creamy without scorching. For oil or broth, use the higher settings and wait until the liquid reaches the desired temperature before adding ingredients.
Chocolate should stay around 110°F to 120°F; if it gets too hot, it can seize. Cheese sets best at medium-low, around 150°F. The Cuisinart probe's low-to-mid settings give you the control you need to keep fondue at serving temperature without overcooking.
